Charcoal Mini Madeleines Recipe, French Butter Cakes. Spooky Halloween Cookies Recipe.

Happy Halloween, Bakers! Let’s make some Spooky Madeleines!

This Recipe features spooky version of our famous Mini Madeleines, French Butter Cakes. These are soft, fluffy and flavorful cookies with Orange Zest and Activated Charcoal for color.

Starting with the Madeleines Dough:

  1. In a Bowl mix together:

    1/2 cup (100g) Sugar

    1/2 tsp Salt

    1/2 tsp Baking Powder

    1 cup (120g) sifted All Purpose Flour

    1 1/2 tsp Activated Charcoal Powder

  2. Add 3 Eggs, mixing each Egg into the Dry Ingredients.

2. In a Pot, combine:

8 tbsp (115g) Unsalted Butter at room temperature

1 tbsp Dark Brown Sugar

2 tbsp Honey

Zest from 1 Orange

3. Simmer the ingredients on medium-low heat until smooth and shiny. Remove from the heat and carefully add it to the Dough. Whisk it all together until fully incorporated.

4. Now, refrigerate the Dough for at least 15 minutes. For the best results we recommend refrigerating it overnight, Madeleines will rise better in this case.

Bake your Halloween Cookies!

5. Preheat the Oven to 375F (175C). Transfer the Dough to the Piping Bag. Pipe the Dough over the Mini Madeleines Mold Pan .

6. Bake Madeleines for 6 minutes.

You will have around 4 trays of Spooky Cookies from this amount of ingredients.

Decor Idea for Charcoal Cookies:

7. Melt 3.8 oz (110g) White Chocolate.

Break the Chocolate into smaller pieces. Boil water in a small saucepan (should be about 1 inch of water). Reduce heat to low-medium. Place a metal bowl on top of the saucepan. Make sure that the bottom of the bowl does not touch the water. Stir occasionally until all the pieces have melted.

8. Pour melted Chocolate into the piping bag. Let it cool for about 5 minutes. The chocolate should be warm, but not too runny.

9. Pipe Chocolate over Madeleines with a zig-zag motion.

10. Put Eye Candy over Chocolate and press gently.

If you are planning to display Halloween Cookies for some time, we recommend using Candy Melt instead of a fast-melting Chocolate.
