Hawaiian Butter Mochi Recipe

Love chewy desserts? This one’s for you. These Mochi have light coconut and butter flavor, not extra sweet and very easy to make. It really is all about the texture!


  • Prep Time: 10 min

  • Cooking Time: 1 hr

  • Servings: 20

  • Equipment: Baking Dish (9x13inch or 23x33cm), Parchment Paper

Let’s mix the Ingredients!

  1. In a big bowl combine all the Ingredients listed below. I used Mochiko Sweet Rice Flour.

  2. Mix it well.

  3. Line the baking dish with Parchment Paper. I decided to use smaller baking dishes while filming the Video Recipe that you can find below. The Dough did rise a lot in the Oven and all the melted Butter did spillover. So I had to clean the Oven afterward. Try to fill your baking dish only halfway up.

  4. Transfer the Dough into the Baking Dish and bake for 1 hr at 350F (175C).

5. Let it cool completely before serving. This might take a while.

6. Cut into pieces and serve. Parchment Paper makes getting Mochi from the baking dish a lot easier.

Ingredients:

  • 4 Eggs

  • 16 oz (450 g) Glutinous Rice Flour (Mochiko)

  • 2 cups (500 ml) Milk

  • 1 can (400 ml) Coconut Milk

  • 1/2 cup (113 g) Melted Butter

  • 1+1/4 cup (250 g) Sugar

  • 1 tsp Vanilla Extract

  • 1 tsp Baking Powder
