Starting with the Madeleines Dough:

  1. In a Bowl combine 1/2 cup (100g) Sugar, 1/2 tsp Salt, 1/2 tsp Baking Powder and 1 cup (120g) sifted All Purpose Flour. Mix together. Now add 3 Eggs, mixing each Egg into the Dry Ingredients.

2. In a Pot, combine 8 tbsp (115g) Unsalted Butter at room temperature, 1 tbsp Dark Brown Sugar and 2 tbsp Honey. Simmer the ingredients on medium-low heat until smooth and shiny. Remove from the heat and carefully add it to the Dough. Whisk it all together until fully incorporated.

3. Now, refrigerate the Dough for at least 15 minutes. For the best results we recommend refrigerating it overnight.

Madeleines look and taste amazing as they are, but you can always improvise by adding different Flavors, Colors, and Toppings.

Here is how we did it.

Mini Madeleines Flavor Options:

Divide the Dough onto 3 equal parts.

Add 2 tsp Matcha to the first part, 3 tsp Cocoa Powder to the second part, and 1 tsp Orange Zest + 1 tsp Lemon Zest to the third part.

Don’t forget to refrigerate the Dough if you didn’t already.

Bake your Mini Madeleines!

Preheat the Oven to 375F (175C). Transfer the Dough into the Piping Bag. Pipe the Dough over the Mini Madeleines Mold Pan and transfer into the Oven.

Bake Madeleines for 5 minutes. Rotate the Mold 180 degrees after first 2-3 minutes of baking.

Adding the Chocolate

Option #1:

Melt the Chocolate (we used the white one). Pour a little bit of melted Chocolate over the Mold Pan. Place your Madeleines on top of the Chocolate. Place the Mold Pan into the Fridge so the Chocolate sets.

Option #2:

Dip Madeleines into the melted Chocolate and finely chopped Nuts of your Choice.

Enjoy your Mini Madeleines!

These are very easy to make as you only need 5 minutes to bake them. And they go very well with any kind of Flavor!
