Pumpkin Muffins Recipe
Cozy and warm Pumpkin Muffins Recipe.

Today we are making Pumpkin Muffins! These are not overly sweet, moist and fluffy Muffins. Eat them as breakfast or add to your evening tea routine, they taste great either way.
Prep Time: 15 minutes
Cooking time: 28 minutes
Servings: 12 medium muffins
Equipment: Stand mixer, Muffin pan, Piping bag(optional), Muffin tulip baking cups
Preheat oven to 350F (180F).
Soak 75 g (1/2 cup) of Raisins in warm water.
3. Beat 140 g (5 oz) Butter with 125 g (~ 1/2 cup) Granulated Sugar in a standing mixer with a flat beater blade.
4. Incorporate 3 Eggs, adding them one by one.
5. Add in 170 g (2/3 cup) Pumpkin puree.
6. Sift 210 g ( 1 + 1/2 cup) All-Purpose Flour into the butter, but do not mix yet.
7. Now add next ingredients:
1 Tbsp Baking Powder
1/2 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Ground Nutmeg
1g Salt
Mix everything together with a spatula.
7. Wash soaked Raisins and pat them dry with a paper or cloth towel.
Add Raisins along with and 100g (1/2 cup) Pumpkin seeds to a dough mixture. Mix well.
8. Pour the Batter into a piping bag. Fill about 2/3 of each tulip paper muffin cups.
9. Top with remaining Pumpkin seeds.
10. Bake for about 25-30 minutes at 350F (180C). Transfer to a wire rack to cool down.

170 g (2/3 cup) Pumpkin puree
210 g ( 1 + 1/2 cup) All-Purpose Flour
1 Tbsp Baking Powder
1/2 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Ground Nutmeg
140 g (5 oz) Butter
125 g (~ 1/2 cup) Granulated Sugar
1g Salt
3 Eggs (150g)
75 g (1/2 cup) Raisins
140g (1 cup) Pumpkin Seeds
