Gluten-free Almond Coconut Butter Cake Recipe

Moist and heavy, rich in nutty flavor with bright coconut notes, this gluten-free butter cake is just right for an autumn cup of tea.

  • Prep Time: 5 minutes

  • Baking Time: 45 minutes

  • Equipment: 22-24 cm (8-10 inch) Baking Pan

Let’s bake our Butter Cake:

  1. In a bowl combine dry ingredients:

  • 2 cups (180 g) Almond Flour/Meal

  • 1/3 cup (40 g) Shredded Coconut

  • 3/4 cup (150 g) Sugar

  • 1/4 tsp Salt

2. In another bowl beat 4 Eggs with 1 tsp Vanilla Extract.

3. Mix in 1 stick (113 g) of melted & cooled to room temperature Unsalted Butter.

4. Now add wet ingredients into a bowl with dry ingredients. Mix well.

5. Transfer Butter to 22-24 cm (8-10 inch) Baking Pan.

6. Bake at 180C (360F) for 40-50 minutes.

Allow Cake to cool before cutting.

Sprinkle with Icing Sugar and enjoy!
