Radiance Tea-Poached Pear

If you are looking for a fancy-looking and easy-to-make and delicious Holiday Dessert - this is the one! It only takes about 20 minutes to poach the Pears. And you can make the Dough ahead of time and just keep it in a fridge until you need it. You can also skip the whole Dough thing and serve the Pears with Vanilla Ice Cream.

  • Equipment: Rolling Pin, Lattice Roller Cutter, Parchment Paper, Baking Pan,Food Processor, Brush

  1. At first, let's make a Pastry Dough.

  2. We made our regular tart/quiche dough. You can find the full recipe in the blog or on YouTube.

  3. Use a food processor to knead the Dough.

  4. Combine 1/4 cup (50 g) All-Purpose Flour with cold 2 tbsp (25 g) Unsalted Butter and mix it for 1-2 minutes. Add 1/8 tsp of Salt and z (15 ml) Water. Knead the Dough until combined into one piece. Put the Dough in plastic wrap and let it chill in a fridge for 1 hour.

5. Meanwhile, let's prepare our Pears.

6. Bring 4 cups (1 liter) of Water to a boil.

7. Put 3 tbsp Radiance Tea Forte tea in the water and boil for about 2 minutes.

Add 2 tbsp of Honey and reduce the heat to medium-low. Simmer for about 5 minutes.

8. Peel the Pears and remove the center core from the bottom.

9. Put the pears into the tea mixture.

10. Cover the pot with the lid and simmer for about 15 minutes. The time of poaching depends on the pear size. We used pretty small ones.

Check if your Pears are ready by piercing them with something. iI they are soft enough through the center - remove the pot from heat and let the Pears cool a little bit inside the pot with tea mixture.

11. Remove Pears from the pot.

12. While Pears are cooling, let's bake a pastry base.

13. Preheat the oven to 350F(175C).

14. Remove the Tart Dough from the fridge. Roll it in any form you like. Use the Flour while rolling, if the Dough sticks, or roll between 2 baking sheets. We used a lattice roller cutter to "style" the Dough. We also put the Dough on metal baking rings to create a form during the baking process.

15. Bake a Pastry Dough until it is lightly golden in color (about 15 minutes). Let it cool.

16. Brush the Pear with Caramel and place it on top of the Pastry (or you can play with it and arrange it in any way you like). You can serve it with a scoop of Ice Cream (they go perfectly together).

17. Filter the tea liquid with a sift. You can drink it hot or cool it down in a fridge. Both ways are delicious.

  • 4 small Pears

  • Caramel Sauce

Pastry Dough:

  • 1/4 cup (50 g) All-Purpose Flour + a few tbsp for flouring

  • 2 tbsp (25 g) Unsalted Butter

  • 1/8 tsp Salt

  • 0.5 oz (15 ml) Water
