Ratatouille Recipe

Start with Blanching the Tomatoes (4-6 count):

  1. Cross cut the Tomatoes from both sides.

  2. Add Tomatoes into the boiling water for 45 seconds. Less amount of time needed for smaller Tomatoes.

  3. Transfer Tomatoes into the ice cold Water.

  4. Now you can easily peel your Tomatoes.

Time to slice the Veggies:

1 Eggplant

1 Zucchini

1 Yellow Squash

2-3 Tomatoes

Ratatouille Recipe

Let’s make the Sauce:

  1. Add 3 tbsp of Olive Oil into the Pan.

  2. On a medium-high heat cook 1/2 of diced Yellow Onion and 1/2 of Bell Pepper for 2 minutes.

  3. Add Slicer Leftovers.

  4. Season with Garlic Powder, Salt and Black Pepper.

  5. Add 2-3 peeled and diced Tomatoes. Cook for few more minutes, stirring occasionally.

6. As the Veggies are cooked through, remove them from heat and blend into the Sauce.

Okey, now the Fun Part - arranging the Veggies!

  1. Put 2/3 of the Sauce amount to the bottom of your Baking Dish.

2. Arrange the slices.

3. Cover the Veggies with remaining 1/3 of the Sauce.

4. Season with salt and Pepper.

5. Bake for 90 min at 300F (150C).

6. Serve with Fresh Parsley and Parmesan (optional).

7. Enjoy!

  • 2-3 Tomatoes

  • 1 Eggplant

  • 1 Zucchini

  • 1 Yellow Squash

Sause:

  • 2-3 Tomatoes

  • 1/2 Large Yellow Onion

  • 1/2 Large Bell Pepper

  • Scrapes from Sliced Vegetables(Eggplants, Zucchini, Yellow Squash)

  • 3 tbsp Olive Oil

  • Salt, Black Pepper, Garlic Powder

Bake for 90 min at 300F (150C)
