Spicy Chicken Quarters with Creamy Potatoes Recipe

  • Equipment: Frying Pan, Baking Dish, Pot, Potato Masher

Let's start with Chicken first.

  1. Mix together all the Spices with 4 tbsp of Vegetable Oil.

  2. Cover 2 Chicken Quarters with Spices and let it sit for at least 10 minutes.

  3. Add 3-4 tbsp of Vegetable Oil or Ghee to a skillet. Quickly fry Chicken Quarters from both sides on medium heat. Make sure your spices don’t burn.

  4. Transfer into the oven and bake for 25-30 minutes at 375F (190C).

  5. After 25-30 minutes cover the baking dish with a lid and continue baking for another 10 minutes.

While Chicken is baking, start on Creamy Potatoes:

6. Cook 8 diced Potatoes in a pot with Water and 3 tsp Salt.

7. Strain Potatoes as they get ready (soft).

8. Add 3/4 cup (160 ml) Heavy Whipping Cream and mash until all the liquid is absorbed. Make sure there are no solid parts of Potatoes left. Add more Salt if needed

  • 1 tsp Garlic Powder

  • 1 tsp Onion Powder

  • 1 1/2 tsp Salt

  • 1 tsp Black Pepper

  • 1 tsp Turmeric

  • 4 tbsp Vegetable Oil for marinade

  • 4 tbsp Vegetable Oil for frying

Creamy Potatoes:

  • 8 Potatoes

  • 3 tsp Salt

  • 3/4 cup (160 ml) Heavy Whipping Cream
