How to make Potato Gnocchi from scratch:

Roll up your sleeves and let's get started!

  1. Cut and boil 3 medium-sized potatoes until they're fork-tender. Once cooked, drain them and let them cool for a bit.

  2. Now grate or mash the potatoes until they form a smooth consistency.

  3. In a large mixing bowl, combine:

    mashed potatoes

    ⅔ cup (150 g) flour

    1 egg yolk

    salt to taste

Mix until everything comes together to form a soft dough. Make sure to not overmix.

4. Here comes the fun part. On a floured surface, roll the dough into long ropes, then cut them into bite-sized pieces. You can only use your hands in this step as the dough is so soft and easy to work with.

You can use the back of a fork to create those classic Gnocchi ridges if you're feeling fancy!

5. Bring a pot of salted water to a boil and carefully drop in the Gnocchi. Let them cook for 3 to 5 minutes or until they float to the surface, indicating that they're ready. Drain.

6. Heat a bit of vegetable oil or butter (I am using Ghee) in a skillet over medium heat. Add the cooked Gnocchi and fry them until they're golden brown and crispy on the outside.

Prepare the Protein and Veggies:

7. While your Gnocchi are frying, cook up your favorite protein (like sausage or chicken) and sauté some veggies and garlic in the same skillet for extra flavor. There is a frozen veggie mix in my case.

8. Once everything is cooked to perfection, toss the Gnocchi with the sautéed goodies in the skillet. Season with salt and black pepper to taste. Add some butter to melt for extra flavor and calories.
