Another day - another Christmas Cookie Recipe!

Linzer Cookies are traditional Austrian Cookies and a very popular Holiday Treat. You can make them with any jam you like. My favorites are Raspberry Jam or Orange Marmalade for the Christmas Holidays, as they look more festive. The Cookies are super tender and just melt in the mouth.

Linzer Cookies Recipe Instructions:

  1. Cut 200 g (7.2 oz) Unsalted Butter into small pieces and put it in a freezer for about 5 minutes.

  2. In a bowl combine 250 g (9 oz) All-Purpose Flour, 150 g (5.4 oz) Almond Flour, 100 g (3.6 oz) Confectioner's Sugar, Zest from 1 Lemon, 1 tsp Cinnamon Powder, 1/2 tsp Baking Powder and a pinch of Salt.

3. Now, add Butter Pieces and 1 Egg. Use a Food Processor with a blade to achieve a sandy texture. Form a few balls from the Dough, wrap them, and put into the fridge for 2 hours.

4. Preheat oven to 350 F (175C).

5. Take the Dough from the fridge and roll it to a thickness of 3mm. It is better to roll the Dough between 2 Baking Sheets, as it becomes sticky when softened.

6. If the Dough becomes soft, put it in the freezer for ~3 minutes before cutting. Use any cookie cutter you prefer. The Cookies are assembled as a sandwich from 2 pieces. Cut a circle in the middle of the top pieces. Place cookies on the baking pan covered with parchment paper.

7. Put the Cookies in the freezer before baking them for about 2 minutes. It will prevent deformations.

8. Bake Cookies for 7-8 minutes (they will be light in color) at 350 F (175C).

9. Remove from the baking sheet and place on a straight surface.

10. Cool them completely before filling. Sprinkle the tops of the Cookies with Powdered Sugar. Spread 1 teaspoon of jam (put more in the middle) on each cookie bottom. Cover with a top piece.
