These Biscotti feature a burst of citrus flavor and added crunch from nuts. Cantuccini Recipe

Let’s bake some Cantuccini!

  1. Combine 150g (1/3+1/4 cup) Sugar with zest of 1 Lemon and zest of 1 Orange, and rub the ingredients together to incorporate citrus flavor into Sugar.

  2. Add 2 Eggs one by one, continue mixing.

  3. Incorporate melted 50g (3 1/2 tbsp) Unsalted Butter, 15g (1 tbsp) Honey, and 1/4 tsp Hazelnut Extract. Mix with a paddle attachment in a stand mixer or with a spatula.

4. Add 275g (9.7 oz) sifted All-Purpose Flour, a pinch of Salt, and 2 g (1/2 tsp) Baking Powder. Mix well.

5. Add chopped 100g (3.5 oz) Dried Orange Slices, 50g (1/2 cup) Pistachios, and 50g (1/2 cup) Sliced Almonds. Mix the dough, and transfer it into a plastic wrap, shaping it into a square.

Let it sit in the fridge for about half an hour.

6. Preheat the oven to 355F (180C). 

7. To make an Egg wash, beat 1 Egg and 3 tbsp of Milk together in a bowl.

8. Divide the dough into equal 3 parts and roll each part into the log. Transfer the logs onto baking sheet. Brush them with the Egg Wash. Bake in the preheated oven for 25 minutes (the logs will be light-brown in color).

9. Remove the logs from the oven and cut them diagonally into 1-inch slices. Lay the cut-sides down on the baking sheet. Return to the oven and bake for about 10 more minutes. The Cantuccini should be soft in the middle and dry on the edges.

10. Cool the Biscotti on a wire rack and store them in an airtight container or a metal/glass airtight jar.
